One of our favorite cuts.  Season generously with salt, pepper, garlic, and herbs of your choice.  Sear it in a hot skillet until browned all over, transfer it to a roasting pan and roast until medium rare or cooked to your liking.

Grass-fed and free-range heritage lamb. Raised on the island of Hawaiʻi. Antibiotic-free, hormone-free, vegetarian-fed, freshly frozen.
